It traces back to 1828, when a plat for the village of Winchester was recorded in anticipation of the Ohio and Erie Canal passing through — "Canal" was added to the name later to distinguish it from Ohio's several other Winchesters. Canal Winchester has grown quickly in recent years, from 4,478 residents in 2000 to 9,107 at the 2020 census, with current estimates near 9,800.

Canal Winchester is also a genuine local healthcare hub: Diley Ridge Medical Center, a joint venture between Mount Carmel Health System and Fairfield Medical Center, operates a 24-hour emergency room and imaging center in the city that explicitly serves the surrounding communities of Pickerington, Groveport, Carroll, and Baltimore in addition to Canal Winchester itself.
